To Make kuska
Seeraga Samba Rice - 1 Cup
Water - 2 Cups
Oil -1 Tbsp
Ghee - 2 Tbsp
Whole Spices
( Cinnamon, Cardamom, Cloves, Star Anise,
Kapok buds, Mace, Stone Flower, Bay Leaf )
Onion - 2 Nos
Green Chilli - 4 Nos
Ginger Garlic Paste - 1 Tsp
Tomato - 2 Nos
Turmeric Powder - 1/4 Tsp
Chilli Powder - 1/2 Tsp
Cumin Powder - 1 Tsp
Coriander Powder - 1/2 Tsp
Garam Masala - 1/2 Tsp
Salt - 1 Tsp
Mint Leaves
Coriander Leaves
Method
1. Pour oil and ghee in a cooker, add Cinnamon, Cloves,
Cardamom, Star Anise, Marathi Moku, Mace, Black stone
flower
and Bay leaf
2. Add two finely sliced onions and four green chillies and
saute.
3. Once the onions turns golden brown, Add ginger garlic
paste and saute
4. Add two chopped tomatoes and saute.
5. When the tomatoes turn mushy, add quarter teaspoon of
turmeric powder, half teaspoon of chili powder, half teaspoon
of cumin powder, one teaspoon of coriander powder, half
teaspoon of garam masala powder and one teaspoon of salt.
6. Add a handful of mint leaves and coriander leaves.
7. Wash one cup seeraga samba rice and soak it in water for
half an hour.
8. Pour two cups of water into the cooker.
9. When the water boils, add the soaked rice after draining the
water.
10. Mix and pour a teaspoon of ghee.
11. Close the cooker lid and allow the rice to cook for one
whistle.
12. Delicious kuska is ready to be served nice and hot.
