Yummy Masala Fried Chicken Recipe

Ingredients:
Chicken: 1 kg, cleaned and cut into pieces
Salt: 1½ tsp, to taste
Garlic Paste: 2 tsp
Ginger Paste: 2 tsp
Red Chili Powder: 1½ tsp
Turmeric Powder: ¾ tsp
Chili Flakes: 1 tsp
Black Pepper: 1 tsp, freshly ground
Roasted Cumin Powder: 1¼ tsp
Coriander Powder: 1½ tsp
Garam Masala: 1 tsp + ½ tsp for garnishing
Cooking Oil: 2 tsp for marinade + sufficient for frying
Lime Juice: From ½ a lime
Onions: ½ cup, thinly sliced
Fresh Ginger: 1½ tsp, finely chopped
Garlic: 1½ tsp, finely chopped
Curry Leaves: 8-10 leaves
Fresh Coriander: 2 tbsp, chopped for garnish


Instructions:
Marinate the Chicken:

In a large bowl, combine the chicken pieces with salt, garlic paste, ginger paste, red chili powder, turmeric, chili flakes, black pepper, roasted cumin powder, coriander powder, garam masala, cooking oil, and lime juice.
Mix thoroughly using your hands to ensure the chicken is well-coated with the marinade. Although marinating is optional for this recipe, you can let it sit for 30 minutes if you have time.

Frying the Chicken:

Heat a generous amount of oil in a frying pan over medium-high heat.
Add the chicken pieces in batches to avoid overcrowding the pan. Fry each side for about 6 minutes or until the chicken is dark brown and crispy. The total cooking time should be about 12 minutes, but adjust according to your stove and chicken size. For boneless pieces, reduce the frying time slightly.

Remove the chicken from the oil and let it drain on paper towels to remove excess oil.
Preparing the Masala:

In the same pan, reduce the oil, leaving only enough to sauté the onions.
Add the sliced onions and saute until brown then add chopped ginger, chopped garlic, and curry leaves. Sauté until the mixture is fragrant.

Return the fried chicken to the pan, add ½ tsp of garam masala, and toss well to coat the chicken with the masala.

Garnish and Serve:

Sprinkle chopped coriander over the chicken before serving.
