Ingredients
For stuffing:
Jaggery 1 cup
Water as required
Green cardamom 2 pcs
Ghee 1 tbsp
Fresh coconut scraped 1 cup
Milk powder 2 tbsp
For dough:
Rice flour 1 cup
Water 1 cup
Fresh coconut paste ¼ cup
Ghee 1 tsp
Ghee ¼ tsp
For jaggery syrup:
Jaggery ½ cup
Water ¼ cup
For cooking dudh puli:
Milk 1 litre
Milk powder ¼ cup
Rice flour 1 tbsp
Jaggery syrup
Method:
Step 1: Prepare the Stuffing
Heat a pan and add jaggery along with a little water.
Let it melt completely on low flame while stirring occasionally.
Once melted, add crushed green cardamom for aroma.
Add ghee and mix well.
Now, add scraped fresh coconut and stir continuously.
Cook until the mixture thickens and leaves the sides of the pan.
Add milk powder for extra richness and mix well.
Turn off the heat and let the stuffing cool completely.
Step 2: Prepare the Dough
Boil water in a pan.
Once the water is boiled, turn off the flame.
Add coconut paste and rice flour while stirring continuously to prevent lumps.
Mix everything well until it forms a soft dough.
Add ghee and knead the dough while it is still warm until it becomes smooth and pliable.
Cover with a damp cloth to prevent drying.
Step 3: Shape the Pulis
Take a small portion of the dough and flatten it into a disc.
Place a spoonful of the prepared coconut-jaggery stuffing in the center.
Fold the edges and shape it into a crescent, sealing it properly.
Repeat the process for the remaining dough and stuffing.
Step 4: Prepare the Jaggery Syrup
Heat a pan and add jaggery with water.
Let it melt completely and stir to form a thin syrup.
Turn off the heat and set aside for later use.
Step 5: Cook the Dudh Puli
In a deep pan, bring milk to a gentle boil.
In a separate bowl, mix rice flour with a little milk to form a smooth paste.
Gradually add this paste to the boiling milk while stirring continuously.
This will help thicken the milk slightly.
Once combined, gently add the prepared pulis one by one.
Let them cook on low flame until they turn soft and start floating.
Pour the jaggery syrup into the milk and mix gently.
Simmer for a few minutes to allow the flavors to blend.
Step 6: Serve
Turn off the heat and let Dudh Puli rest for a while.
Serve warm or chilled as per preference.
