Goa Chicken Vindaloo / Vindaloo Recipe
1/2 kg chicken
10 Kashmiri chillies [ deseed 6 and keep 4 whole ]
2 tsp cumin seeds
1 inch cinnamon
4 cloves
3 cardamoms
1/2 tsp peppercorns
1/2 tsp turmeric powder
Salt to taste
2 tsp sugar
15 flakes garlic
1 inch ginger
Palm vinegar as required to grind masala
2 onions finely chopped
2-3 tbsp oil
Method
First grind the chillies, cumin seeds , cinnamon, cloves, cardamom , ginger, garlic, salt and sugar in vinegar. Marinate the chicken in this masala for an hour .
Heat oil in a pan and fry the onions till golden brown. Add the marinated chicken and sauté for 2-3 minutes. Now cover and cook the chicken in its own juices for about 10 minutes on low heat, stirring in between. Add a little water and close the lid and cook on low heat till the gravy thickens. Enjoy .
