Goa Mutton Xacuti / Mutton Shagoti / Yasmin Fernandes Recipe

Goa Mutton Xacuti
1/2 kg mutton
1 tbsp ginger garlic green chilli and coriander paste
Salt to taste
1/4 tsp turmeric powder
Marinate the mutton with the above ingredients for 30 minutes . Add 1 1/2 cups of water and then pressure cook the mutton for 4 whistles on medium heat and then for 15minutes on low heat. Put off the gas and allow the cooker to rest for at least 15 minutes.

For The Masala
2 tbsp coriander seeds
15- 20 cloves
1 tsp black peppercorns
2 inches cinnamon
4 cardamoms
3 badi elaichi [black cardamom]
2 mace [ javantri ]
1/4 nutmeg [ jaiphal ]
3 star anise
2 tsp fennel seeds [ saunf ]
Roast all the above for 2-3 minutes on low heat. Keep aside to cool.
Also separately, roast 2 sliced onions and 1 grated coconut in 1 tbsp oil till brown. Now grind the masala and the onion coconut mixture to a fine paste along with 1 tsp tamarind and water as required.

In a pan heat 2-3 tbsp oil and fry 2 finely chopped onions till they turn slightly pink. Add the xacuti masala and sauté for 2-3 minutes. Add the boiled mutton gravy and stir. Add water to adjust the thickness of the xacuti and allow the xacuti to come to a boil . Garnish with fresh coriander leaves. Serve hot with roti, bread or rice. Enjoy.
