Karak chai has been around before the condensed milk. The key to karak chai is actually (1) boil the ingredients in very small amount of water till the water almost evaporates, then (2) add milk and boil till the milk is at least 20% reduced. Now you have the karak, truck driver chai!

I use evaporated milk because my Indian friend uses that. There's just something about that milk that makes it so rich instead of regular milk. I was so proud of myself when she came over and I made it to her liking. I was like, yes. I made authentic chai. Lol.

I’m Azerbaijani, we never add milk to the tea and gently brew it only turning the fire off before it starts bowling. If we miss and it starts boiling, we throw the tea. Here in Dubai my daughter felt in love with Karak tea, so many thanks for posting this recipe. 🙏
