Amla Launji Recipe 🍋
✨ Tangy, sweet, and spicy—a winter favorite!
Ingredients:
Amla (Gooseberries) – 400 gms
Water – for boiling
Ghee – 1 tbsp
Hing (Asafoetida) – ½ tsp
Saunf (Fennel seeds) – 1 tsp
Kalonji (Nigella seeds) – ½ tsp
Jaggery – 150 gms (adjust to taste)
Black salt – ½ tsp
Salt – ½ tsp
Jeera (Cumin) powder – ½ tsp
Red chilli powder – ½ tsp
Black pepper powder – ½ tsp
Method:
1️⃣ Boil amla until tender. Cool slightly, remove seeds, and separate into segments.
2️⃣ Heat ghee in a pan. Add hing, saunf, and kalonji—let them crackle.
3️⃣ Add amla segments, stir well.
4️⃣ Mix in jaggery, black salt, regular salt, and spices (jeera powder, red chilli powder, black pepper powder).
5️⃣ Cook on low heat until the jaggery melts and coats the amla. Stir occasionally.
6️⃣ Simmer until the launji thickens slightly.
✨ Let cool & enjoy this flavorful relish with parathas or rice!
